This past week was a hard one, my work partner and I worked extra long days so that we could have a few extra days off over the weekend, that meant 12 and 14 hour days, I’m not complaining though, it’s work, I enjoy doing it and I get paid well enough to be happy with it. I don’t have to go back to work until Tuesday, so that gives me a few extra days to catch up on some needed rest and chores.
Today after church, I took a long nap, upon waking, I had one hungry PB asking what was for dinner, I had a quick and easy/simple dinner working in my head, I grabbed my stash of dollar store thin pizza crusts, a bottle of alfredo sauce, shredded mozzarella cheese, a can of chicken (I got all of these from the dollar store), and I chopped up one small white onion. I sauteed the onion in some butter, then spread the alfredo sauce on the pizza crusts, I applied the sauteed onion, chicken and cheese to each pizza. I did sprinkle some Italian seasoning over the whole thing then popped them into the oven for about 15 minutes.
They turned out wonderful, especially for a cheap and quick meal. It used to be that the food and products in the dollar stores were less than, cheap in quality and sometimes downright awful, that has changed, now they carry name brand products/foods, and their house brands are pretty good too. It’s gotten easier and easier to get good/quality products and foods from them and at a price that is affordable. I can tell you it really helps this off-gridder make ends meet.
